Either leftover brisket or Trader Joes enchiladas tonight. Avocado either way as guacamole or salad.

No crab legs?
See, those enchiladas look naked to me. All of that part that is just exposed tortilla is just going to be dry. When I make or order enchiladas they are completely covered with sauce (and cheese). I think this is why CE found them to be dry.

I was just about to post the same thing. Do they come with a separate sauce pouch to pour over? I'm not even sure I'd call them enchiladas as they are pictured. I've never been able to eat an enchilada with my hands. I had assumed they at least came frozen with sauce that thawed when you heated the package. Good reminder why I don't buy prepared meals at TJ's .

All I can say from experience is that theyre not dry and we eat them weekly. Once they become a meal, Ill take a picture with the package card separate with the ingredient info. Its hard to take a picture of all the info while its still a package. Its a 350 reheat product. Theyre too soft and moist for hand eating.

no crab legs today - plus weve plans next Monday so itll be 4/12 for the next king crab leg meal.

These are at Costco...frozen & I think they use a low carb (cheese?) tortilla but they are certainly covered in sauce although I don't really even want the ends uncovered. If I was served those TJ ones in a restaurant I would send them back. I know you eat them weekly but have you tried others or restaurant ones or making your own just for comparison?
BTW, my Costco now had the snow crab claws in the freezer section ...they never carried them before although I know that yours has had them for a while . Anyway, the package says that thawed crab should be eaten within 2 days. I think you are taking a chance with your 5 & 6 day old crab legs. I can't imagine going that long with seafood...best to buy what you can eat for one or maybe 2 meals . Those crab legs you buy are previously frozen.

Yep, those were the lousy ones I bought. I had to smother them in salsa, because there is absolutely no sauce, which I think is the definition of an enchilada. Maybe they should just call them soft tacos or burritos or something, because they are not enchiladas. And not particularly good in my book.

Exactly...I was thinking taquitos but those are fried...burrito or soft taco is a better description. I have had them in a restaurant as well as made at home where it is actually hard to figure out where the enchilada is under all the sauce/cheese.
But I guess someone besides Gao likes them as TJ doesn't usually keep products around that don't sell. They aren't for me though.

These freezer ones look a bit closer to what I would call an enchilada but still are a bit naked.

The frozen enchiladas look good! I know that restaurants smother enchiladas with sauce - my favorite taqueria has a similar burrito and I forgot the name for it. Its possible that my spouse doesnt like too much sauce. I have been to Trader Joes when the enchiladas are sold out so someone buys them. I just eat them because my spouse likes them.
