I would be remiss not to add Pho Chi in Gaithersburg, MD to this thread. It's a funny little place, tucked behind a gas station. It's a beer/wine shop with an area with a handful of tables, hardly high on the ambiance side of things. But man, the pho is great. No other place in MoCo compares. The broth is wonderfully flavorful and nicely spiced. More cinnamon-y and anise-y than others, but I like it that way.

Along with the standard bottles of Sriracha and hoisin sauce, they have this homemade chili concoction that is simply addictive. I could sit and eat the chili straight from the container.

LOL....to me, I'd never set foot in place that uses Cinnamon and Star Anise (Chinese-Viet owned Pho shops in the US does this a lot), it tells me that they don't know how to cook proper Pho and have to use spices to mask their broth. Additionally, Hoisin sauce ruins the broth, a good Pho broth is always clear, never cloudy. Anyway, I know everyone's taste is different, I'm just used to a certain style of Pho.

Well... I didn't say it was DOMINATED by spices, just that cinnamon and anise were more present than in other broths. To my knowledge - although I am not a professional Vietnamese chef - herbs and spices are an integral part of pho broth. The mom-and-pop who own and run the place are decidedly Vietnamese, not Chinese.

I personally don't use hoisin sauce in my pho. But just because it's there on the table doesn't mean the pho is crap. It means the owners are aware enough of the standard American palate to have it there for those who want it.

But anyway, to each his own.

And therein lies the problem... With no standard by which we measure, and given enough participation, we'll eventually list every single pho shop. That list would be useless.

I have several to add to the list, and I'm fairly confident in my expertise in this area, but I'm not going to bury them under a list.

According to yesterday's New York Times the new place to go for pho is Atlantic City:

I'm only about 25% kidding when I say that I would trust neither the NY rag or pho from NY/NJ.

It's a painfully flawed sample, but I tried four or five highly recommended (by Yelp and other NYers I know) pho places in Manhattan, and they were all downright nasty. One of them tasted like they had just dumped a box of Swanson's beef broth into my bowl.

There are too many good pho places in Houston, TX metro area. Just to name a few pho chains: Pho Binh, Pho Danh, Pho Saigon, and many moms and pops pho shops. Well, it is more difficult to find a bad pho in Houston.

Best Pho in Columbus (yeah, I know, not saying much) is the Pho Noodle House on Lane Ave. near OSU campus.

Agreed, even in the distant suburbs like Katy. I'm always a fan of the single location "freestanders", especially for sampling different approaches to what seems a "national dish". In my experience, the origin of the chef/owner matters, and "Hanoi Pho" often turns out to be quite different from that prepared by someone who grew up in the Southern Delta (or his/her children) or has been influenced by living/working in Cholon.

Not quite downtown, but Pho on 6th (just east of Downing) is pretty good. Not quite as good food as the places out on Federal, but the dining experience is better.
