The pho at Aux Delices in San Francisco is some of the best I've had in the states.

When you say hooked, I often do you eat it? When I was hooked last year, I had it at least once a day for lunch. Sometimes I would schedule brunch and late lunch meeting with clients for pho meeting on the same-day, but different restaurant.

Like every second weekday. But we just moved offices, so the pho is less accessible in NE Calgary, and its one particular restaurant that serves it the way I like it.. super extra hot, sneezing and coughing at least once per meal.

My favorite in Chicago is Tank Noodle on 4953-55 N.Broadway. Frequented heavily by Vietnamese. Menu is extensive and they have great Vietnamese sandwiches. Service is fast, although you may have a 15 - 20 minute wait for a table on a busy Saturday night.

Agree with all of this - and it is a favorite of the Vietnamese in the neighborhood. In addition, Tank Noodle is BYOB.

On Wednesday when they are closed, Pho888 which is just around the corner is a very good alternative. It is much smaller, not as bright and somewhat dingy, but the Pho is very good.

If you are staying near the Red Line it is very easy to get to. Take the Red Line to the Argyle stop and it is about a 1 minute walk west.

Pho Da Bo has changed its menu and now includes Satay Seafood for the same price as their Satay Beef. Now to bring myself to try it out when I'm hooked on the beef Satay.

If any of you ever find yourself in Orlando, we have a pretty good sized Vietnamese population here. I live in the Vietnamtown section, and have about 20 pho places within walking distance. My favorite is a place called Pho Vihn.

I like to get the thin sliced sirloin, but tell them to bring it out raw. When they put it in the broth, it is already well done before it gets to you. Get it raw, and you can dunk it for a few seconds and it is great.

I also get the tripe and tendon. I don't know why, but I love it in pho. Don't think I would enjoy those textures in any other dish, but they are great in pho.

Is a chicken Pho part of their original cuisine as well, or just something they created abroad for those who prefer white meat to red meat?

No. Chicken Pho is the original Pho, Beef came later.

This is wrong. Beef was the first Pho. Chicken was a derivative.



A related note: the Pho in the north, where it originated, is distinct from that in the South. I think the broth is less aromatic and complex, and they garnishing herbs are also different.

Since the majority of emigrants were Southerners, its their style that is widely recognized as Pho in the USA

Pho Saigon in Milpitas, CA on Landress just off 680 is a good place, good quality meat in their pho, quick, friendly family service. Cash only, but prices are good, too. I sometimes stop in if traffic is bad heading from SJC to the valley.

My very favorite Pho restaurant in Silicon Valley is Pho Vi Hoa on El Camino between Palo Alto/Los Altos/Mountain View. The best service ever in a Vietnamese restaurant, really tasty pho and great spring rolls.
