I prefer the more 'original' meatball type when I go that route
A unique flavor and you may not want to ask what exactly it is,a bit like a sausage, I however like them in various ways as well.

Commemorating the first ACT "Pho-Deaux", at the Clay Pot, Starwood Lurker, Steph3n, and myself, 5/14/12...

In my eyes (those of a purist), Pho is "Beef", a broth from shanks and the like, whilst chicken and shrimp variations likely carry other names "in country". I have this suspicion that the "classic" version came with "Tendon", although certainly better cuts add upscale refinement, and the "meatball" addition is for the luxury 4* and 5* diners. Obviously, there are countless variables among the garnishes and additions, but could any here of actual Vietnamese heritage confirm that cooks from the North tend to use anise in the broth?

When it comes to shrimp, it's not Pho, Southern noodle called Hu Tieu uses Shrimp. Only chicken and beef are Pho.

The opposite is true, Northern Pho never had anise. Anise is usually used in the South in Pho broth.

Because of this thread, I had to go have pho for lunch at my favorite pho place, Pho Hong Phat in Long Beach. Sooooo good.

Don't see one in the Android store though.

Interesting. A Vietnamese friend of mine called this "Vietnamese tarragon." Very pungent stuff.

I'm sure there are several, but the one on Mason Rd., South of IH10 in Katy, name dis-remembered, cures my pangs and is worth a detour.

Found a Pho restaurant with really great food in Fresno, CA.

Pho Phuong Nine

Very generous serving sizes, delicious fragrant broth, and good meat. The spring rolls were excellent as well. Great basil/peppers/sprouts.

This is a hole in the wall type place in a strip mall, so basic linoleum floor, basic tables, but very friendly and quick service.

If you are in the Valley, this is a nice place for an inexpensive meal. Large bowl of Pho $6, spring rolls $3.50.
