Thank you so much.

You're welcome. Ours is cooking now, and smells yummy. Another 10 minutes or so in the oven, and dinner is ready.

I'm going to make paninis. We had a party on Saturday p.m. I'm going to take leftover Serrano ham, Compte cheese and yellow cherry tomatoes roasted with garlic and olive oil and press between buttered La Brea multi grain bread.

I'm normally a brandy or whisky Mac girl, but have neither in the house, so settled for red wine! Not had / heard of Rumplemintz, what is it?

I've always resorted to whiskey or a double shot of Jägermeister and Rumplemintz, mixed together, which seems to burn, but then do wonders on a sore throat.

Ooo, could you send me your recipe too? I've always wanted to make chicken pot pie...especially if there's a way to make it not too fattening.

Thanks!

If people are in the market for a good cookbook with quick takes on French staples and other pan-European stuff, check out Jacques Pepin's Fast Food my Way and More Fast Food My Way. Nothing in them takes more than about 40 minutes to make and they're all delicious - think versions of beef bourgignon, cassoulet, etc.

I just sent it. It's not the healthiest recipe, but you can always eliminate a pie crust to make it a bit healthier.

Roast chicken with jacket potatoes and vegetables.

Turn oven on, throw a couple of scrubbed potatoes on the bottom shelf - they can be in there while the oven heats up.

Rub some butter on the outside of the chicken. Thrown unceremoniously into the oven in a roasting tin.

Roughly chop some peppers, zuchinni, etc. and toss with some olive oil and herbs of your choice (rosemary, oregano etc) Pop in the oven alongside the chicken.

Depending on how long you took to chop everything and how big the chicken in, it should all be ready about the same time. If the veggies are done sooner, take them out and cover with some foil until you are ready.

Hands on time, about 10 minutes.

Bonus - for tomorrow night's supper you can make a quick chicken risotto / fajitas / salad etc with the leftover meat.

If you don't fancy chicken again, substitute beef - still works with potatoes and veg!

That sounds yummy, but would require me to stop at the store on the way home.

My go-to when I don't have a thing in the house is a version of pasta carbonara. I almost always have bacon in the freezer, pasta in the pantry and eggs & pecorino in the fridge. Or if I don't even have the bacon--I squeeze a couple lemons, add garlic, olive oil & a beaten egg & toss the hot pasta with that....grate some cheese & lots of black pepper over the top---voila!

I was pondering just doing pasta and tomato sauce. I don't have bacon, garlic, or lemons either.

Yes, I'm trying to avoid stopping at the store on the way home, and I'm trying to keep things as simple as possible.

It's one of those nights where if Mr. Kipper wasn't home, I'd ponder having yogurt and cereal and going to bed.

Saut some shrimp. Takes a few minutes—that's it. Steam some vegetables or make rice with it.

Or....why not have breakfast for dinner. Make some eggs, bacon/sausage, and toast.

No bread in the house, no bacon in the house. Is it obvious that I've not gone grocery shopping in a few weeks?
