Bonus - for tomorrow night's supper you can make a quick chicken risotto / fajitas / salad etc with the leftover meat.

If you don't fancy chicken again, substitute beef - still works with potatoes and veg!
That sounds yummy, but would require me to stop at the store on the way home.
