Dinner at Eating House 1849 (Roy's Poipu Kauai):

It had been awhile. So delicious. Roy's butterfish is one of my all-time favorite dishes anywhere. The potstickers were incredible.

dinner last night at LoCoco’s Cucina Rustica with a number of FTers. This is the Risotto al Diavolo with shrimp and scallops and a nice amount of spice. Not pictured was the fresh bread with an olive tapenade dip.

Smoked salmon, baked summer squash (olive oil, breadcrumbs, parmesan, paprika, garlic salt), steamed spinach. I usually grill a single filet and give Mrs BV the thinner end as she prefers it more well done. This time I sliced it lengthwise and made a big ragged mess. But is tasted good all the same.

Do you have an actual smoker or do this on the grill? I don't like squash but that looks delicious. 👍

I do it on the propane grill. I have a small metal box that holds wood chips. Call it lightly smoked.

You would not taste the squash. You would taste the parmesan cheese. I’m not a huge fan of summer squash, but that comes from my mother boiling the crap out of it and serving a puddle of yellow mush. My neighbor got a big box of vegetables as part of an FFA sale and shared with me. I had just come from Aldi with bags of fresh veggies. I took what I didn’t already have which amounted to yellow squash and a red bell pepper. This recipe is definitely for those who are not summer squash lovers. I could have added the pepper to the mix, now that I consider it. 475 for 15 minutes if you want to try it.

Burrata pizza with rocket, cherry tomatoes, and Parma ham - unfortunately, the Parma ham was cut too thick and was overpowering my chewing ability - at Partigiano in Luxembourg
