I normally avoid Mexican food outside of Texas and Mexico - however, at Red Iguana in SLC, I really enjoyed my chicken quesadilla and guacamole - but the queso needed some significant improvement

Carbonara pizza at Settebello in SLC - I wouldnt really consider this a Neapolitan despite their signage stating VPN certification, but the toppings and flavor were good

No pics but last night I made a riff on coq au vin. Instead of using bacon, I used crumbled Italian sausage. I think next time I would keep the sausage in the casing and just slice it.

Probably a good idea. We make a hearty lentil soup often which calls for crumbled Italian sausage. We tried it once that way, but decided we much prefer cooking the sausages whole, then slicing them into "coins".

A very early birthday dinner at Matts El Rancho - beef fajita quesadillas - with Mothers Better Than Anything cake, which was the best she has ever made
