As a (nearly) lifelong Chicagoan, I occasionally remember certain things I wish were available here. We love breakfast sandwiches, so I got it in my head to make Toulouse sandwiches (a la Bennison's Bakery in Evanston). My cousin was bringing croissants from Merci Cafe in Scottsdale. So, I sliced the croissants, then added bacon, ham, gruyere and scrambled eggs and then drizzled bechamel over the top. Pretty tasty, if I do say so myself. We sat outside and enjoyed them with fresh berries and Mimosas. The only complaint was that there were not two sandwiches for each of us. Next time. Finished up with home made lemon mousse with fresh whipped cream.
my favorite Chicago (city) places: Rocket’s wagyu / foie burger Au Cheval’s strawberry jam with toast, served with foie gras any drink on the 95th at John hancock i never had Hot Doug’s fries in duck fat but I had similar when I had the impossible burger at Cockscomb (SF - Chris consentino’s place). Irony that all his years as a top chef of meat and it’s the impossible burger that will make him as wealthy as he deserves. So are you in Chicago or Evanston? My in-laws are in hp, just 25 minutes north of Evanston. |

I find that reheating steaks just doesn’t turn out that well. In the US, we usually sous vide a few chuck roasts at a time, keep them sealed in their pouch, and then sear them out of the fridge when we’re ready to eat them.
