I was given some homemade Oaxacan mole yesterday from a family I’ve sponsored buying groceries and household supplies. I need to google what makes Oaxacan mole Oaxacan mole. They asked how spicy I’d like it and I replied ‘mild to medium’, a little bit of heat, but they decided to make mild. Thank goodness because my mouth was burning a little and my face was sweating. 😄

I made Mexican (brown) rice and had some shredded chicken in the fridge.

Partner likes American cheese. Somehow, our order was misunderstood and we ended up with 2 pounds of sliced cheese. I made cheese and salami omelets for breakfast, with a few leftover au gratin potatoes from last night thrown in. Surprisingly tasty considering it was American cheese.

There are myriad types of mole, each with numerous ingredients. Oaxaca and Puebla are most famous for the dish; common ingredients can include chocolate, plantains, pumpkin seeds, garlic, and smoked dried chilies, but not necessarily all in the same recipe.

Xico, Veracruz is also famous for mole.

The regular gift of a side of smoked salmon from the Chesil Smokery arrived today and we wasted no time in tucking in for lunch, followed by some Vacerin de Mont d’Or, another Christmas season mega-treat.

Not to me, there's no better gooey, melty, tasty cheese than American for a cheeseburger or eggs! As long as it's not the weird fake stuff like Kraft Singles.
And I write that as a bonafide stinky cheese lover as well. :)

Never heard of this before so I did a little research. Apparently, it's so good chefs don't like to share the recipe. I read that the food critic of the Chicago Tribune said that Alinea's version in Chicago (which they came up with after a trip to Spain) was the best cheesecake he had ever had. I Googled a recipe that is supposedly similar to that of Viña in San Sebastian and am going to give it a try one of these days soon.

(Not sure I'd want the olives on it, however. ;))
