that ended up being a luncheon (and posted in the Christmas meal thread) instead of brunch. I needed more time to make the scone dough :-)

The one thing I see missing from all your wonderful photos is the small dish of nam pla prik. (The sliced bird's eye chilies in fish sauce). Absolutely wonderful condiment, and normally always present.

Christmas Eve dinner:
  • homemade chicken pot pie
  • cabbage sautéed in bacon grease with chopped onions

Christmas lunch (with leftovers for dinner):
  • baked ham
  • cornbread dressing with giblet gravy (from yesterday’s chicken)
  • broccoli/cheese casserole
  • sweet potato casserole (without marshmallows)
  • butter peas (a Southern vegetable)
  • homemade buttermilk biscuits
  • green jello salad (pineapple, pecans, cream cheese)
  • homemade lemon meringue pie (made with lemons from a friend’s tree)

gorgeous overall meal - did you cook bacon on Xmas eve or do you normally store the bacon grease? If so, how long can it be stored? As a child, I often had cabbage or Brussels sprouts with bacon slivers, so the bacon grease had a huge delicious presence. My mother did store bacon grease or other grease in jars but didn’t reuse for cooking.

Ahh, that's better! Your Thai omelettes were crying for a generous amount on top... :)

Good lunch at the CLT Centurion Lounge: Wedge salad, curry chicken with mashed potatoes, corn chowder, fruit and a lemon pudding dessert. Plus a tasty local IPA.

Leftover small scones (blueberry / chocolate chip) warmed with clotted cream
seeded sprouted rye bread toasted with butter
prosciutto di San Daniele (Costco)

I’m excited for luncheon and we have many great choices :-)
