It looked so delicious that i found a recipe and made it. Even though I didn't use much oil, at the end it was so oily that I had a hard time eating it. It was delicious but too oily for my taste. How come yours doesn't swim in oil.

We cook the salmon skin-side without oil in a porcelain pan and use the pure 100% Thai coconut milk sold at Asian markets I believe it's called "Aroy D". Drama aside, the final product is so delicious it's like eating something that invokes childhood memories :)
