I used some split tops purchased at the shop given that I'm in New England by the water it's hard to beat what they offer. I have a theory around using a scallion pancake as a kind of taco wrapper though. That's next week's recipe.
Butter in a pan, toast each side until nicely brown and buttery. While the bun is slowly toasting (No need for high heat, slow and steady wins the race) take your lobster, in this case a 6lb behemoth I steamed and deshelled the previous day ($6.50 a lb!), and decide whether you are a heathen tail person or a glorious and enlightened claw person. Take your requisite piece and dice into roughly 1/2 inch cubes or pieces. I try to drag my knife around to separate little pieces off. Note: If you have a LOT of lobster meat, which I did this time around, you can use kitchen shears in a bowl to very quickly cut the lobster into usable chunks Take out your toasty bun, add half a tbsp of mayo (kewpie is best, I only had regular) and smear along the bottom of the bun. Add lobster, top generously with celery salt and eat before the bun cools down. It's the best version I have had. The lobster coated with mayo just doesn't hit right. |

yesterday a friend dropped off a prepared supper (for reheating) from Nopalito for my spouse’s birthday. Thankfully it was carnitas and we try for no pork, so we didn’t eat this last night. I get to eat this for luncheon. :-) carnitas pork rice & beans corn tortillas Thick tortilla chips papalote salsa avocado salsa omg so great. I kept with my “no restaurant” mantra while getting yummy carnitas that I almost never would attempt to cook at home. ps the carnitas reheat instructions were oven for 30 min at 325 or so. What’s the advantage of this over microwave for 2 minutes? |

IME, the microwave tends to toughen the meat.
I learn so much here. I’ll be poaching salmon and roasting cauliflower for supper for my spouse. Also will grill a cheeseburger and cook oven fries for our child. I’m ready for a quick nap on the deck and I’ll hopefully not burn. |
Today has been a weird day for me. I couldn't fall asleep last night, so I had a sourdough brownie at 1 AM, then skipped breakfast and ate lunch around 2:30. That was a grilled cheese with three types of cheese. I followed it up with coffee and more sourdough brownies. I think I'm skipping dinner!

I made orange olive oil cake yesterday. So tasty - a crunchy top but very moist on the inside. The recipe says good with fruit for breakfast or vanilla ice cream for dessert. So I did. :) |

Man, I used to love this thread. Kinda neat that the current state of affairs has driven it back up.
I was feeling a specific craving for Nigerian (really just West African in general) tomato beef stew and rice so that ended up being dinner here. Fried plantains on the side. Took me right back to my several trips out to Nigeria and all the wonderful people I've met there. I didn't take any photos but I will try to remember for later as I used to. I used a mishmash of recipes from the web, but primarily based it on these two: https://www.allnigerianrecipes.com/s...-chicken-stew/ https://tasty.co/recipe/nigerian-beef-stew I'll be holed up in a hotel in NJ for two weeks for work beginning next week, so I plan to cook my ... off at home in the meanwhile since I'll be stuck with takeout for my time up there. |

maybe I’ll start working on sourdough next week. making quiche as part of my spouse’s birthday week and I’ll also make another round of roll-ppang. Will return to grocery store today for more eggs. I have one of those “$5 off a $20” purchase coupons at Walgreens so feeling tempted because it’ll expire on Thursday. |
