I've had several near-cry episodes with my fiancee and steaks. She was incorrectly taught that juices running from meat = bad. She likes to order "medium to well" (whatever that is) and I'm trying to get it thru to her that juices = yummy and that the meat can indeed be pink or red. She's slowly coming around and starting to just say "medium". When I was little, I used to be a medium well child because the red tone of the meat for some reason scared me. I'm somewhat of a meat purist. I feel that, for me, the steak was not prepared correctly if you require a sauce or other accompaniment to make it taste better. I suppose that's why I almost never order steak at a restaurant because I like mine better at home. I have the same thoughts toward pork, chicken, and nearly anything else that one might put a sauce on.

Maybe it's better said that I'm just not a fan of sauce? :confused: In any event, to each his own. ^

Just out of curiousity, does this apply to au poivre as well? IMO that makes for a completely differnt flavor, and not an enhancement.

On a completely different note, is anyone else's FT acting like an oldie-time teletype machine? I can sometimes type almost entire sentences before they will show up on screen. :confused: :rolleyes::rolleyes:

Generally, yes. I usually put some peanut oil (fiance is allergic to olives) and season the steak, which is the first part of au poivre. I would then enjoy the steak in that way, without a pan sauce. I suppose that when I have a steak, I would like it to taste like a steak and not something else. But like I said, that's just me.

And input issues are almost always due to something on the user's computer, such as a browser that is sucking up too much memory or processor cycles. Check thine task manager, and levy penalties against offending applications.

We grill steaks with only olive oil and fresh crushed garlic on them. Let them sit like that for a couple hours at RT, then grill to a medium rare... there's nothing better... serve with fresh ground salt and pepper. That's it. No sauce.

Now you're making me hungry. There is snow on the grill, but not so much that we couldn't use it tonight... :p

Point taken on flavor. I very rarely use a pan sauce, being much more a fan of Montreal rubs, etc. I've made Montreal-rubbed steak and then sliced it for fajitas. That's good eats right there.

Thine task manager hath check, and ye find many offending apps. ^ Vista sucketh a fat one.

I've got an eight-foot-long Pitts & Spitts Smoker Pit in the back-yard. In Houston, Winter is one of the most bearable times for outdoor smoking (decent temperatures and no mosquitos). I need to fire that baby up and smoke a Pork Standing Rib Roast with my special marinade. Mmmmm...
