With a package of ground beef, my dinner plan morphed from pasta with a red sauce -> pesto gnocchi -> five spice ground beef with roasted kabocha squash.

Went to a small neighbourhood French - Thai ( Issan ) restaurant .. had mango salad , pork skewers , braised beef cheeks with creamy mash , asparagus , broccolini and colourful cauliflower . Also shared some wagyu beef with fine Thai noodles in broth . Others had one of the specials for the day - Thai river prawns in Tom Yum served with rice .

I picked up a pack of circular Vietnamese rice paper recently with the aim of being able to make family snacks and simple lunch meals for my homeschooling daughter.
Using the recipe starting at 2:37 for “Vietnamese Street ‘pizza’” in this video I made versions according to everyone’s tastes (daughter is still on the undulating low hills of her life ascent into the chilli peaks). I used a Korean chilli sauce I had to hand as I’d run out of Sriracha, but it was really difficult to mess up. Shredded chicken and lots of fresh chilli pepper slices - even a little scatter of my home made ginger sauerkraut - everything melded together into a tasty mess yet the rice paper kept it all neat and tidy and easy to eat. Haven’t looked at what the carb content is for rice paper, but it can’t be that much; they weigh less than 13g each and assuming it’s 100% carb, that still fits nicely into a low-carb diet allowance. I just made sure to load mine up big and thick so I wouldn’t want more than one. My husband asked for a second; he’s not carb counting. I’ll be teaching this to my kid in the next year or so so she has another option when she’s feeding herself after school. Perfect for camping trips too! |

Just had one of my favorite local sandwiches, the Roman Salad with grilled chicken as a sandwich from Monte's, a local Italian grocery/pizzeria/sandwich shop. It's a great chopped salad with grilled chicken wrapped in essentially one of their pizza crusts. And a creamy garlicky dressing.
