With the remainder last week's leftover pig shoulder marinated with chile en adobo (mostly bits and pieces of scraps, with lots of sauce, at this point), I used that for some chilaquiles w/egg for today's mid-day meal, with some sliced palta on the side.
Since I've got a tub of fresh tomatillo salsa that well, won't be fresh very soon, I bought another bondiola de cerdo (that's the Argentina term - not sure what it is called in Mexican) and just put it in the Instant Pot, with some large chunks of onion and carrots, and that tub of salsa, with a bit of caldo de pollo to get enough steam going. I'll probably freeze half of it. Part may be mañana's dinner. Or who knows. |

Here is a simpler one .. semi DIY pizza at the club .. just for fun . The fish skin was supposed to be part of the CNY yusheng salad dish . My daughter got to choose today’s dinner. I made her favourite - cream stew. My base recipe which I use when making this with fish or chicken is this one here:

Easy to make with just seafood ingredients if avoiding meat. If you have yuzu koshou, add a little bit at the table and the taste transforms into something rather more elegant than you’d probably expect. |

Speaking of long in the tooth, I dug out some Best by 2018 and 2019 mac and cheese from waaay back in the cupboard. I went with the 2018 vintage, had to whack the cheese packet on the corner of the counter a few times, and added some balsamic roasted brussels sprouts to round things out.
