I made a white bean and bacon soup this afternoon from dry beans soaked overnight. So much better than canned beans. 😋

how do you poach the eggs over the tomatoes? I only know how to poach eggs in a pot of water.
Or do you poach the eggs in the pot of water and then add them over the skillet?
I first poached eggs in 2020, so that’s already a huge achievement for me!

thank you - the NYT cooking app article doesn’t allow copy/paste but it says to crack open the eggs and place them atop the tomato mix, in skillet, then bake until eggs are set, 7-10min. So that totally answers my question about how to poach the eggs. So fun!!

I usually just put a lid on the pan & finish it on the stove...eggs get done just fine .

Those are Michael Solomonov's instructions in the first recipe which I linked.

Crack the eggs into the skillet, spacing them evenly in the sauce. Lower the heat, cover, and cook until the egg whites are set but the yolks remain runny, about 5 minutes. Top with serrano chiles and cilantro and serve immediately right from the pan.

I'm not sure how well that would go over with saffron-water-soaked grains from the Oryzeae tribe, so I'm about to dig into a dish of plain old Texmati with vinegar-soaked red onions and a side of yoghurt with shredded radishes and powedered cayenne pepper. Should give quite the kick for the day without it being a kick from the Equidae family.

Sesame, Asiago, All-season. I don't believe the last one was egg, although they did have an egg skinny too. They didn't have salt, which is another of my favorites.

Eggs are cooked by simmering in the small amount of liquid from the tomatoes, green onions, and feta cheese - sorta like steam-sauteed but not for long.

Dinner last night!
Sautéed eggplants with chicken, Thai chilis, and basil
Leftover roast beef in brown sauce (Sam's Club)
Spinach feta puff pastries
Rice and salad
