Why would you put the over easy eggs on them and not eat the yolks? If you don't like yolks you can just separate the eggs before putting them on there.

I used a metal spatula with hopes that a yolk might accidentally break and spill into the food. Didn’t happen. I love yolk and didn’t want the added cholesterol. Maybe tomorrow some yolk will spill over the food. I’ll see...

two eggs over medium in olive oil - jon & vinnie’s, LA (across the street from Canter’s) style buttered sourdough toast omg I am sooooo thrilled about cooking corned beef hash - a favorite dish that I hadn’t eaten for over 380 days before 3/17!!! I’m so happy about this. Gaobest - so happy!!!

soup of bibigo chicken & cilantro won tons, bok choy, tofu, mushrooms, spinach, and Asha noodle with ginger, garlic, and korean pepper paste. In hindsight I should have added the dried red chili peppers.

of course, I failed to say that I skipped yolks although one broke before cooking so I ate some cooked yolk. The other egg stayed intact so I could just push it aside. Still as little yolk as possible for cholesterol maintenance. the other foods have the unavoidable cholesterol whereas I can successfully avoid egg yolk cholesterol.
