Maguro croissant sandwich. A fresh croissant from Patisserie Rotha, some blocked Maguro, a bit of whipped cream cheese, wasabi mayo, avocado, mixed greens and cilantro. Oh it was delicious!

It is! The sweet cake mixed with the tart plums. I used the pluots (plums crossed with apricots) from Costco and it was delicious. So quick and easy to make too. I was so happy when I thought of this recipe and then found a GF version. I don’t eat sweets much anymore because GF sweets aren’t often as good.

Did some experimentation on my new banana bread today as follows:

- Soaked dried prunes and raisins in banana-flavored Bacardi rum for 4 days! Drained them saving the liquid for my evening libation and added the soaked dried fruits in the batter.
- Used one cup of EVO oil instead of butter
- Used 5 eggs
- Used 1/2 almond flour & 1/4 psyllium husk & 1/4 pastry flour
- Used 1/2 the amount of recipe sugar
- Used a cup of walnuts

The final product was an amazingly moist and delicious loaf or two! :)

Los federales are on their way over to take you into custody. Pringles with Carnitas and guac. Truly the last sign of the apocalypse. SMH.

My wife is getting creative with leftovers. Took some Chinese bbq duck takeout, and turned it into duck stirfry. Plus she made a killer mango pudding. I had to sample it before I even took a picture. Delicious!

Last night padron peppers as an aperitif with some delicious Tio Pepe, followed by fish cakes with lemon sauce and peas, followed by blackberries and cream.

Turkey meatloaf and green beans with bacon.

I love to add cashews to stir fry, veggies, etc.

Did you have a sauce on the meatloaf? I like a tomato based glaze, or sauce on mine. Some of the brown sauces are ok, some are horrid, so I usually take the safe route.

Lol I thought the pizza thread was that last sign of our apocalypse :-)
