The old lady cleaning up the freezer this morning, found the following goodies which made my day & breakfast! :)

Wheat date cookies (Klecha) and filo filled with cream (Brides fingers) - 10 minutes in the oven & had an awesome breakfast!

Breakfast - omelette with sautéed mushrooms & a smattering of onion

luncheon - Mapo tofu & white rice (only using ground beef, tofu, canola oil, korean red pepper paste, water, and corn starch).

first time in years that I’ve cooked with mushrooms and first time to try & cook my beloved Mapo tofu. Nowhere near to being like any Chinese restaurant but I’ll seek the Sichuan pepper corns or similar for the next time.

For lunch today, I'm using leftover tortillas, fitting them into muffin cups, and then adding refried beans, meat, and cheese and baking them.

Leftover mexican rice (2 tbsp total?) and steak (2-3 Oz)
leftover oxtail stew (mostly vegetable - carrot / celery / potato)

warm pita, raw vegetables, and Sabra hummus

iced water - with the new refrigerator’s door dispenser, I cannot stop drinking water. That convenience makes a Mega difference. We are so lucky that our child reminded us of our mAui rental’s refrigerator’s door dispenser!

Good idea. Did it turn out crunchy like a tostada, or still soft?

Crunchy. I put refried beans in the bottom, then baked them for a bit before adding the meat and cheese.

I made an eggplant chickpea curry in the Instant Pot at 5 am and ended up eating it for breakfast, lunch, and dinner. The photo is from breakfast. After sitting on warm all day, it melded well and tasted best at dinner. And definitely not the prettiest thing I’ve made.

The Ling Ling chicken potstickers are ok, but I like their pork ones much better.

pork anything tastes a million times better than chicken anything, when doing a blood swap. It’s probably 5X the cholesterol if I can recall my cholesterol class I took to avoid needing statins.

If you are at all concerned about cholesterol I suggest that you meet with a nutritionist. Yes, eating salmon and chicken is better than pork (although lean pork is not bad) but all of the white bread and white pasta and pizza & lack of leafy green or almost any veggies are equally bad. Having a grilled cheese or pasta with tomato sauce is fine once in a while but the majority of your diet should include some fiber which means whole grains and high fiber veggies and fruits. The amount of simple carbs --including lots of sugar (as opposed to complex carbohydrates) that you eat is not helping cholesterol but also can be a factor in diabetes.

This. If cholesterol is such a big concern, then you need to focus on adding more fiber, not just avoiding pork.

My wife fired up the BBQ for some items today. Roasted corn and beef short ribs. Then some mashed potatoes and pork stir fry with broccoli, and onions. Really tender pork slices, with great flavor. Everything was quite good.
