Lengua is delicious, perhaps one of my favorite taco fillings. Just like a tender, flavorful roast beef.
While I'd readily tuck into a horse steak, I'll pass on eating Mr. Ed raw. Hay no! I've seen head cheese at the deli and based on visuals alone, I'll pass. Too many pieces parts. |

If a place is known for it, I'll order this type of taco. Best I've had was in San Antonio, don't remember the name of the restaurant. Otherwise, I'll usually head toward steak, pork, or seafood in my tacos. |

If you gave them a bite blindfolded they would love it, but the name or look throws some people off. |

I just ate almost an entire pound of carrots. I cut them into matchsticks and roasted them until they were crunchy on the edges, then sprinkled with fresh thyme and Maldon salt.
