exactly and actually the thickness of whatever sauce you are putting them in helps them stay together so you don't have feathered whites.

On my range, 2-3 minutes max unless you like your egg yolks well done & dry!

I did a small pork shoulder roast in the Instant Pot today. Really wanted it to be more green using a small can of Ortega green chilies, but I rubbed the two halves with what I had, a red chili powder blend. I tossed onion wedges in some of the meat juices and baked them in the toaster oven. It’s delicious so I can’t complain.

The burner is turned off so I don't understand why it would be different. If you have an electric stove that takes a while to cool down just take the pan off the burner.

Last night I had a couple of glasses of wine too many which led to my first cheat snack in about a month - Trader Joe's Happy Trekking trail mix.

More closely related to Shakshuka which usually consists of poached eggs over fried tomatoes.

Chilaquiles OTOH consists of corn tortillas cut in quarters and lightly fried and topped with variety of items that may or may not include tomatoes or eggs.

i like my chilaquiles with green sauce (and of course tortillas ) and with an egg poached on top. Then some cotija cheese on top plus crema and cilantro.
and I guess i make shakshuka differently too...i dont fry tomatoes. I use a sauce .

Was in the mood for some baked goods this morning - so drove up to Moulin Bistro down the street ... Got a large pear tart ($36), 2 chocolate croissants ($4 each), and an almond croissant ($4.50). Got the AMEX small business $5 credit for a total damage of ~ $43 - not too bad!
