Updating the above, two $100 credits posted to my Amex account today (Jan. 2), but the Benefits page is still showing $200 available through the end of 2018. It appears Amex does, indeed, use transaction date for these reimbursements, despite some scattered claims to the contrary.

Two friends bought 1x$200 GC 12/30, reimbursed 1/3. I'll continue to do 2x$100 just to be safe but shows that 1x$200 works as well.

I bought two $100 AA gift cards a day apart and just realized that I kinda forgot to switch my airline choice from UA to AA The one I bought on 1/1 has posted but the one on 1/2 is pending. I just switched my choice to AA. Does anyone have any data points that suggest these might still trigger the credits?
I have a decent amount of flying on AA to do this year so not the end of the world....but just kinda wondering. Thanks

I'm guessing you'll go 0-for-2 but you might get lucky with the second one. For some people, buying a gift card too soon after changing airlines — i.e., less than 24 hours — has meant to credit.

Buying lots of $100 AA gift cards this past month for Platinum friends and family. All have gone smoothly except my wife's second $100 AA gift card purchased on December 26. It still hasn't triggered the reimbursement. I purchased one in my own account on Jan. 1 and already have the $100 back, so it seems pretty obvious that this one was "missed " by AMEX's computer program. She was quickly reimbursed for another $100 AA GC earlier in the month.
What's the best way to proceed, without calling a lot of attention to what she actually bought? Thanks.

Bought gift cards on 12/31. Reimbursed on 1/2 for the fractional amount left of my 2017 credit balance. Less than the full gift card so clearly reimbursed based on purchase date.

Seriously. Weird stuff happens. Last year this time there was some strange screw-up in the system that ended out working out fine. You can always call later if need be.
