Which 789 maintenance figures are you referring to?

UA1 (72%), UA863 (63%), and UA839(61%) on flightstats. I didn't look into the OTP of all 787s recently. Looks like they got slightly better, but perhaps I always see UA895 and UA881 are better in OTPs. Maybe as a whole 789s weren't bad.

Another reason can be BR competition. BR is actually starting a morning flight (3x/week?) in the fall with nearly identical schedule as UA (within 5 minutes on TPE-SFO and about 2 hours earlier than UA SFO-TPE). So, the least UA can do is hardware.

The extra Y seats also help carry the student/tourist load. The new BR and CI 77Ws are also 10 across in Y.

That's really not a fair comparison. Crew time-outs due to flight length mean those flights will cancel more than nearly any other UA flights.

You will see more people saying "avoid the 744, it's unreliable" than any other UA aircraft. I pay no attention to that stuff. Cancelation of any single flight is still basically an independent event from a statistical perspective.

I would fly the 789 simply because of the better air quality and pressure.

Seems they are promoting the new business class in Taipei via invite to special event:

United Polaris showcase in Taipei*

Join us to preview the revolutionary United PolarisSM business class. Your best inflight experience awaits.

June XXXXXXXXXXXX
The showcase includes a United Polaris business cabin tour, a virtual reality trip demoing the United Polaris lounge to inflight amenities, complimentary gifts and a drawing for roundtrip tickets from Taipei to San Francisco.

Interesting they are hosting a marketing event there. Don't think UA did this for HKG nor TLV?

I'd prefer the B789 serving TPE over the B77W, or the A350-1000 one day.

I must say I flew the 789 LAX-NRT, and arrived there feeling pretty refreshed.

At the other Polaris events last summer the gift bag was a Polar bear, the thin Saks blanket used in Polaris, chocolates, and a Polaris-logo notebook.

Not sure about HKG (or TLV), but I believe they are doing marketing events in Mainland also.
