Any discussion of sandwiches should mention Jerry's Sandwiches in Chicago, where the menu is many many pages of nothing but...you guessed it, sandwiches. I think they have over 100. And over 200 North American beers.

That said, I made a good one today:
slice of whole wheat toast
shmear of Chavrie goat cheese
some stone-ground mustard
some sliced pickles
turkey breast

My international sandwich - Panino with mozzarella, tomato, basil all gooey on the inside, crusty on the outside, ideally eaten at a table on the street in Italy
My 'lunchtime when I am at work' sandwich - Avocado, hummus, arugula, tomato, jalapeno sour cream on black pepper and parmasan bread
My 'ohhh what shall I have for lunch' sandwich at home - Crusty french baguette sliced down the middle and filled with brie, tomato and then microwaved until just melty, then a good dollop of Hellman's mayo
My 'childhood memories' sandwich - strong chedder on store bought bread (for real retro it should be brown bread as white bread was a swear word in our house, but given we often have sliced white now, either works) with salt and vinegar crisps (ideally, but sadly, rarely, Walkers) in the sandwich (school lunchbox-tastic
)
My 'not entirely a sandwich' sandwich - cheese on toast (grilled cheese sandwiches have a less desirable ooey gooey cheese to bread ratio, and the cheese doesn't bubble properly when it is on the inside) with some heinz ketchup.
Gosh I want a sandwich now!

Another sandwhich that I love was found at an Italian deli in Stamford, CT called "Victors," which was eventually taken over by Bobby Valentine and changed to "Victory Deli." It now appears to be closed.
In any event, the sandwhich was called the Turkey Lew and featured Boars Head Turkey Breast on sliced Italian bread with roasted red peppers, fresh mozzerella, onion, basil and Hellman's mayo. A variation used roast beef in lieu of turkey.
When at a good NY Italian deli, I order a version of this, but usually on a hard roll. Typically turkey, but if the deli has extemely rare roast beef, I'll get it with roast beef.

Been getting into BLTs (Hold the T) recently. White toast, a little bit of mayo, bacon (not too crispy, but not too soggy either) and lettuce. Had one for dinner last night and it was excellent.

I make mine on small brioche rolls with Miracle Whip, lettuce, tomato, and crispy bacon. Divinely yummeh, but not to be enjoyed again until after April 24th. These days it is avocado, lettuce, tomato, and Miracle Whip on potato rolls.

All meat, dairy, and eggs. Basically down to a vegan diet. Yeah, I know that Miracle Whip probably has egg in it somewhere, but if I was perfect in my fasting regimen, I would probably suffer from pride about it. LOL.
