rib eyes are choice steaks from Safeway - $5.99/lb in value pack. Normally $14.99/lb, Club of $8.99/lb, and a U special of $5.99/lb, limit 2 for a one-time use.
my spouse wanted baked potato; my child wanted steak fries. I enjoyed both. They cooked (baked) together in the oven for the same hour and same 500 degree temperature. Easy :-)

I just ordered Girl Scout cookies from a friends daughter. Now I really want some cookies now. Sigh.

I know you Americans have a weird rating system for steaks, where does "choice" sit in the hierachy?

Second best (Prime is highest grade), and most common beef available. Choice is a very good quality cut of meat typically. I believe there are 6 or 8 grades.

Whole wild sea bass stuffed with lemon & dill baked in a salt crust. Served with roast veg and homemade garlic aioli.

These are the ones that are most commonly sold at retail:




There are also:

U.S. Standard – Lower quality, lacking marbling.

U.S. Commercial – Low quality, lacking tenderness, produced from older animals.

U.S. Utility

U.S. Cutter

U.S. Canner

Standard and Commercial grades of beef are generally sold as ungraded or as store brand meat. Utility, Cutter, and Canner grades of beef are seldom, if ever, sold at retail but are used instead to make ground beef and processed products.

Last night it was fish pie, peas and broccoli. Haven't had a fish pie for years and this was delicious with a very full complement of beautifully fresh fish.

And on that note, I started a 4lb chuck roast in the sous vide a few minutes ago. Should be done in time to sear for dinner TOMORROW night. I'm told it turns out like prime rib, but it only cost $14. Hoping for the best.

Certainly, if it's a brand known for high quality. Belcampo and Harris Ranch readily come to mind; there are several others of that high caliber.

Bought a pork centre loin roast and have been alternating pork chops and small roast with that, sort of Italian/Tuscan style, as well as finishing a beef pot roast. That's all gone.

Defrosted the freezer yesterday and got out a beef cubes - AAA (equivalent of USDA Prime) Angus from Walmart - and another pot roast joint so made a big pot of goulash following a recipe from an upmarket Austrian restaurant (not that there is really anything upmarket about Austrian food). Did run out of sweet paprika and the only stuff I had left was a hot paprika packaged for the domestic Indian market, so well see how piquant it is. That with Austrian cucumber salad and German egg/broad noodles.
