our UM friend said that this is almost as good as Buddy’s. he might have even said that it’s the closest to Buddy’s in SF - we have about 6 Detroit style pizza spots and 3-4 of them only have Detroit style!

I been playing around with ceviches of varying descriptions. The one I have settled on is a mix of Latin American with the addition of coconut milk as they do in Tahiti. I also cut the sourness by adding a bit of squeezed orange juice. It's become a summer favourite and beats the hell out of coooking in this humidity.

I usually cook salmon on my Traeger at 225 for 35 minutes. It has proved to be foolproof and the tastiest I have ever had. I also have discovered the "miracle" marinade for salmon, no matter how it's cooked. Basque Norte. 1 to 2 hours in a ziplock bag in the fridge.
35 minutes?? Is that for a whole salmon? I just cook filets & go for about 8 or 9" per inch of thickness. Total. I marinated it after I brined it.

As an aside, I LOVE Asian noodle dishes. I could eat good chow mein every week.

I like to mix up "noodle" dishes. Try new combinations... You never know what you find and like. Classics are good too, but as they say. Variety is the spice of life. Just some combos don't work well together. Cheese and rice noodles for example.
