I been playing around with ceviches of varying descriptions. The one I have settled on is a mix of Latin American with the addition of coconut milk as they do in Tahiti. I also cut the sourness by adding a bit of squeezed orange juice. It's become a summer favourite and beats the hell out of coooking in this humidity.
