Always used canned beetroot. ;)

It's really nothing flash. You get fed them when you're a kid. I just had some left over beetroot so I thought I'd try one. Very good. Quality butter helps.

I love a good salad sandwich as well, but they're so hard to find these days. The vegetarian sandwich is always so overwrought.

I finally found and tried the keto enchiladas at Costco. I don't recommend.

The green chile sauce was good, the chicken filling was okay, but the "tortillas" tasted like they were made from pressed canned chicken.

I think they missed the boat here, as a pure cheese "tortilla" similar to what you get by melting and crisping cheese in a skillet, probably would have been much tastier, and more aligned with what a normal enchilada would taste like.

They were made from chicken and parmesan, I believe.

I would make pickled beets (with or without turnups), if you're into pickled foods!

Tried the Trader Joe's cheesecake today and it has a decent creaminess, texture and flavor plus not a bad price: 30 Oz for $7

Taiwan Turkey rice with purple rice and peas
steamed dim sum - cabbage buns and bbq pork buns (given to spouse)
I have one final cabbage bun. It’s as disturbing as one can imagine.

Can you give us the ingredients of the chicken/eggplant? I see the eggplant was fried, but the chicken? Boiled?

I already posted the Youtube video recipe for the eggplant in post # 6133 - but find it below again at minute 11:50.
Chicken is cooked separately in a pressure cooker (hence the delicious chicken broth in the photo) according to instructions or any other way (fried, boiled, pan-cooked, etc.) and laid out on the plate hot or cold. Eggplant salad poured on top immediately before serving as not to do away with the chicken flavor. With the chicken, there are many variations/options but the ultimate decision is yours or according to your palate.

Grilled Costco choice boneless ribeye (half a steak - probably still 7/8 ounces!)
purple rice with peas
sauteed red onions with frozen chopped spinach, sweet baby peppers, and cherry tomatoes with a nice splash of old red wine still in the fridge from a month or two ago
housemate guacamole (yet zero chips!)
Jarred chimichurri

i intended to just do rice & peas with steak but knew that I needed more vegetable & fruit matter. somehow this became a “Carne Asada” themed meal.

I really need to have only have a salad and fruit for supper. Heaven help me.

I made a curry split red lentil and rice soup this morning for breakfast and now I’m having a second bowl for lunch. Despite clear blue skies, it’s still chilly soup weather at my house, currently 57°F.
