Our very best and almost perfect home rendition of Jimboy's Tacos. NOT authentic Mexican by any means, but incredibly delicious. A Northern California legend for decades.

I grew up near Denio's and was eating their tacos every chance I could as young as 3 years old in 61, while at the same time my future wife lived in Kings Beach, and was eating them there at the same age. They have remained among our favorite fast food indulgences all these years.

They are full Mexican restaurants now, and pretty darn good (and authentic) ones at that, but it's their original ground beef tacos that steal the show.

Cooking method, seasoning in beef, special cheese, dusting of Parmesan cheese on tortilla. Why not try them and see for yourself. :)

Lol--that's still a long drive for tacos. I'll take your word for it. but the parmesan on the tortilla is interesting!

I attempted to make homemade spaghetti sauce in a crockpot, but somehow it ended up being too watery. Currently cooking it without a lid to see if that improves the sauce.

skirt steak marinated in mojo criollo then grilled for tacos with fresh cilantro & guacamole

To drink with dinner: Corona Familiar (MUCH different than the typical Corona)

After dinner drinks:

Aperol Spritz

Prosecco (or Cava)
1 shot Aperol
1 pour of seltzer water
1 slice orange

Fill a tumbler or large wine glass with ice. Fill the glass 2/3 full with sparkling wine. Add the shot of Aperol. Top with seltzer, stir well, then add the orange slice. Awesome summer drink

Last night out on the deck:

Avocado toast crostini
Grilled bacon wrapped shrimp--marinated in coconut milk/sweet chili sauce

Bone in loin pork chops---marinated in lime juice, honey, sake, garlic, ginger & then brined and grilled
haricot vert with goat cheese and toasted almond slivers (actually over-toasted/almost burned almond slivers :D )
Potato salad made with mixed teeny tiny grilled potatoes, hard boiled egg, and red onion with a fresh basil dressing

Store bought dessert...Vanilla bean froyo
White chocolate/raspberry bundt cake.

Yep! I try to eat a half an avocado every day & they are perfect this year. Still a little pricey but worth it. Sprinkled with a little Maldon sea salt & it's the best.

Costco in NW Chicago is now carrying lamb tenderloin, not a common cut of lamb to see, in fact I've never seen it in any market I've shopped.

Grilled some with a spice rub, then served with a cool yogurt sauce, really tasty. Recipe here: http://www.foodnetwork.com/recipes/b...recipe-2043627

Thought I'd try making a quesadilla,despite lack of experience. Pepper jack cheese, diced sautéed mushrooms and red peppers, jalapeño slices, sweet corn cut off the cob. Turned out fine.

Nothing beats lamb on the grill. Nothing.

I made a southwestern pasta salad and am marinating chicken breasts in Badia sour orange for grilling tomorrow night.

Tonight's dinner was a toasted peanut butter and strawberry jam sandwich and a diet A&W.

It was better when you first order it, but got tough when I reheated it in the microwave. But still yummy nonetheless.

I did a bone-in leg of lamb on the kamado this past weekend. It was really good, but I may do boneless the next time. I'm thinking if I unfold it, I can get some garlic and herbs inside the roast and then tie it back up before cooking.

Dinner menu:
1. Treasure Platter - Foie Gras, Prawns, Pan-Seared Scallop
2. Braised Superior Shark's Fin with Supreme Broth
3. Baked Cod Fillet with Miso Sauce
4. Thirteen Wonder London Duck
5. Braised Ramen with Whole 8-Head Abalone in Abalone Sauce
