Tonight, bratwurst on the grill, plus I have a dozen colossal shrimp left (uncooked) from last night's dinner - these will be placed on 2 skewers for as appetizers for the Mrs. & me. I may grill some zucchini as well.

Chicken Divan - chicken, broccoli, cream of mushroom soup, cheddar cheese, lemon juice, curry powder, milk and bread crumbs baked in a casserole. Served over rice.

Nothing fancy but it gets the job done. :)

I'm on my way to Austin for the weekend, staying with a friend who loves food as much as I do and always picks a good restaurant.

Might be doing second dinner after a night of drinking too...Waffle House, perhaps? :D

Since it was so good at lunch, I think I will do a repeat of the pink banana squash wilted spinach salad. (the things are massive and I still have about 2/3 of the squash left!)

A new invention of mine, no bacon or bacon fat in it, and a lot more healty, and very tasty :D

Pink Banana Squash, however much you care to cut up I guess since all flavors are to taste. Cut the squash, remove the pith and seeds. Slice it thin and then dice it up.
Put diced squash in warmed olive oil, add a couple dashes of salt (I use kosher salt, but float your own boat, I use first cold pressed Texas olive oil too, but again use whatever you want)

finely dice about 1/2 a large onion, and put it in with the squash to saute.

Add a couple tablespoons of White Balsamic vinegar to the saute veggies.
I used about 3 teaspoons of agave nectar to enhance the natural sweetness, add that or sugar if you wish.

Add 5-8 freshly diced whole basil leaves, stir in and continue over warm heat.

Let the mix cook till the onions are transparent, the squash should be a bit more tender as well, but it is already quite tender, and even good raw.

Season to taste, add enough vinegar that you have a bit 'saucy' as this will be your salad 'dressing'. Add sugar/agave if you think needed.

Add fresh spinach on top and give it a quick stir and wilt. Remove from heat, transfer to dish and enjoy a much more healthy spinach salad that tastes wonderful.

My first bite I was a bit meh on it, but it really grew in flavor and I have to say it was a wonderful invention!

<sniff> I've never done the store bought.

It's so easy to do it yourself:

1. Preheat oven to 425 F.
2. Slice potatoes. I prefer round slices, but you can easily do spears too.
3. Put sliced potatoes in a baking pan. I like to chop up an onion too, and put it in the pan.
4. Drizzle a good amount of olive oil on it all, enough to coat the potatoes thinly. Add salt and pepper to taste.
5. Shake it all up to mix and coat the potatoes in oil.
6. Bake for 50-70 minutes, shaking the pan every 10-15 minutes. More thinly sliced potatoes need less time. You might need a spatula to move pieces that stick to the bottom of the pan.

Also works great with sweet potatoes.

That's it. :)

Since I had oooodles of spinach I made a batch of really spicy ginger chili chicken (in an asian manner) and put some spinach in it and let it cook down. Really tasty :)

Zucchini Squash, Onion, Tomato, okra, 3 type of peppers, with freshly made (well two days ago!) basil pesto (without pine nuts!), garlic, about 2 tablespoons of rice mixed in, and some white wine and a touch of milk for moisture, and sprinkled with just a hint of sharp Italian cheeses. It is in the oven now, a bit of a fresh veggie casserole, it will be exceptional :)

Because I have amazing okra! and no it is not slimy at all. In fact this okra is downright amazing plain. Just wash it a bit and rub the fuzz to keep it from tickling the mouth :)

But the flavor and healthy crisp snack, tickles the snacktooth!
I thought the farmer was crazy saturday eating it plain, but no he was on the right track!

I am making raw marinara-style sauce, and fighting with my raw milk to make raw cottage cheese right now :)

I am trying to keep it under 100F, but now I see I can go up to 115 or so and still be raw, may do that 100F is taking FOREVER :D

Once I am done with this, I am thin slicing zucchini, for using as lasagna noodles and making a raw food veggie meal.

I am not experienced in raw foods, so having to research what I am doing :D

Hard to find non heat processed protein, I am going to use a bit of raw pine nut in the layers to add a bit of crunch.

Ethiopian tonight. Doro wat (spicy stewed chicken); awazi tibs (beef); red lentils; yellow lentils; stewed cabbage. All eaten with injera and accompanied with some good beer.

Looking out into my backyard now. Seems we have some juvenile racoons snooping about. Don't think they make good eatin', but if anyone has any recipies...;-)

Made it today, single serve sized.

Made another one larger, and put some cheese other than the raw cottage cheese on it, and cooking it in the oven :)

The raw version layers made with zucchini that were soaked in basil, bay leaf, jalapeno, lemon water, and filled with orange bell pepper, spinach, red onion, shi`take mushroom, raw cottage cheese and a little finely diced yellow squash, just a couple raw pine nuts sprinkled in as well. The top is done a bit inverse so the sauce was on top and could 'drain down' keeping all moist.
