What's for dinner?
It's a gloomy, rainy day in the Bay Area, so
I'm cooking a pot of chili, and making a pan of cornbread. I got a sack of Fritos at the store so I could have Chili Pie (an old friend from growing up and going to Texas elementary schools) You? |
MMMmmm what goes into your Chili. I find Chili Recipes interesting. I was talking to someone at work and they said they put pepperoni in their chili.
Me I am home alone with the dog on this Friday evening and I am being really bad and having Pizza. |
It's as much a ratio as a recipe....
1 pound of ground beef (stew beef cubed very tiny also works well but is a lot of work) 1/4 cup good chili powder per pound. ~ 8 oz of tomato sauce (add 50% more water instead if you're a purist) ~16 oz of water. 1/2 tsp of garlic salt The above can be adapted upwards, but slack off on the chili pepper the more meat you do. After meat browns, drain and add the other ingredients. Then, depending on the mood and the kitchen add: Dried chili peppers (w/seeds left in/taken out to taste). A tablespoon of Liquid Smoke (a la Corky's BBQ in Odessa "Rib Meat Chili." Is that place still there?) Minced onion. You can try pepperoni. So your chili has no beans?
Mine is pretty similar 1 pound of ground beef 1 large onion 1 large can of baked Kidney Beans 2 small cans of Tomatoe soup 2 tsp of crushed red peppers Chili Powder...the amount changes depending on how hot I want it. |

ribeye steak from our local (tiny, not much selection but excellent quality) butcher rice pilaf my first attempt at borccoli au gratin came out pretty well if I say so myself.. and later...homemade pumpkin pie.... |

Dinner sounds excellent in The City tonight. bnagirl is out of town this weekend at a medical conference in Ann Arbor. bnaboy and the 5 kids feasted on leftover pizza tonight. I promise it was NOT North Beach either. Tomorrow we will try to elevate to something that is at least fresh. We miss Mom!!!!! |
It was gloomy here tonight too. I made a beef stew, accompanied by some fresh sourdough bread and a nice glass (or a few) of red wine. Yum!

Eastwest's Delicious Sandwich 1. Take two pieces of bread and smear cottage cheese on both. (Just like you would PB). 2. Put lunch meat of your choice in the middle. Enjoy. What can I say? I like it. |

Me, I had a late lunch - taco salad at the Hopyard - and skipped dinner. Mr. letiole slept so he could be awake to watch airplanes over night and T-wiz bought a rice crust tofu cheese pizza from Whole Foods that he says he will never again buy. |
Tonight I will be having salad to make up for eating the Pizza last night.

Tonight it's roast pork stuffed with prunes and garlic, fresh sauteed wild mushrooms, oven-roasted potatos, green salad and a delicious pear and almond tart from Gérard Mulot.

Up here in Big Wonderful the skies have been cloudy all day. The deer and antelopes ain't playin. Haven't heard a discouraging word, but the Pokes are in Provo.
I'm contrary and inspired cuz of this FT thread. Checked the freezer....looks like: Filet mignon and salmon. Zapped red potato and cut corn. Got some Moose Juice stout. Have a great weekend! Count your blessings cuz I'll be studying for a pavement design exam. Arcane even by Civil Eng. standards! |
I really don't feel like making dinnner. I have nothing in the refrigerator since this is the only night in the first 21 days of November that I have an opportunity to make dinner... And somehow I ran out of both chili and split pea soup care packages in the freezer, how the **** did that happen?

Entree: Grilled Skirt Steak marinated in Ponzu, served over white Japanese rice.
Vegetable: Wok sautéed bok choy and celery w/a touch of sesame oil. |
It was going to be swordfish, but when we got to the fish market they had some incredible looking scallops, so it was au Gratin Sea Scallops Calypso (from a Princess cruise line cookbook) and soprasetta over angel hair pasta.
Much better then the swordfish would have been, and lots of leftovers for the week. |

OK, here's the soup recipe:
1 pound ground beef (I only use 1/2 lb.) 1 cup chopped onion 6 carrots, cut in 1/2 in. julienne 2 stalks chopped celery 3 cloves minced garlic 2 14.5 oz. cans chopped tomatoes 1 15 oz. can great northern beans, undrained 1 15 oz. can kidney beans, undrained 1 15 oz. can tomato sauce 1 12 oz. can vegetable juice 1 tablespoon white vinegar 1 teaspoon salt 1 teaspoon basil 1 teaspoon oregano 1/2 teaspoon thyme 1/2 teaspoon pepper 8 oz. ditalini pasta Brown ground beef in a large skillet and drain off all but 2 tablespoons of the grease. Add onion, carrots, celery and garlic and saute for 10 minutes. In a 6 qt. pot, combine meat mixture and all remaining ingredients, EXCEPT pasta, and simmer for 1 hour. Cook pasta in 2 qts. of boiling water for 8-10 minutes until the pasta is al dente. Do not overcook. Add pasta to soup and simmer 15 minutes. It's a lot of work to julienne all those carrots, but worth it because they don't get mushy. The soup is better if made the day before, and will thicken when refrigerated.
