Based upon their Instagram page and menu, UNO Neighborhood Pizzeria in Tbilisi seems to have no connection to the Chicago based Pizzeria Uno chain, whose only international locations are in Saudi Arabia and India.

Heading out of town for the weekend, so I didn't have much in the way of 'fresh' food leftover as I didn't want it to go bad. Ended up with a chicken ramen dish from Costco I picked up during my last trip. They're simple-- just add water/microwave -- and taste pretty good. Polished off with a few Joyva raspberry jelly rolls I picked up at Economy Candy when in NYC last month.

A slight clarification - while Pizzeria Uno and Due originated in Chicago, the chain isn't based in Chicago. I think most Chicagoans who have experienced the chain restaurants would say they're quite different (not as good) than the original. At any rate, I guess the point of your post is to suggest the one in Tbilisi might actually be good?

Mini khachapuri at Radio Cafe, Tbilisi (adjarian, 4 cheese, and pear and Gorgonzola) - the bread was good, but I wasnt super impressed with the pear and Gorgonzola one - the adjarian I had at Kneina the night before was better, and dare I say, the one I had at the Courtyard Brasserie was better, too

when I ate there in 1997-1998, I was stunned by just how TINY the seating was. Super tight booths.

What was the "secret wine pairing" with the dessert?

If I tell you, it wont be a secret! I thought it was going to be some sort of botrytis late harvest something given how he was talking about the climate - but no.
Spoiler

My online search for pizza in Baku did not raise any appealing leads, so I settled for my new-found love, Georgian cuisine - while the first restaurant I tried quoted a 2-hour wait, a nearby restaurant was more accommodating. While the khachapuri was not as good as those I had in Tbilisi, the fried khinkali with meat were delicious (unfortunately, the minimum order was 5 pieces, which was too much) - Manari Restaurant, Baku:
