I comprehend your fear of the unknown. Its a good pizza. I want to still get potesto pizza. Potato pesto pizza. An ex told me about it in 2004 and it sounded so good.

I don't think it's fear. I've eaten quite a few pizzas over the years, and potato pizza aside from the double starch, just sounds incredibly bland. Pizza is a guilty pleasure for me, and I won't waste the calories on blandness. Case in point, I will not ever eat a plain cheese pizza, regardless of the type(s) of cheese. Oh I've tried, but never again unless I was starving. What sounds incredible is Corky's pastrami pizza which I still have not seen on any menu. It will happen.

It isn't just potato. Potatoes sliced very thin crisp up on the pizza. You can add bacon, rosemary, maybe very thin red onions or even better is caramelized onions. Gruyere cheese is good on a potato pizza. Roasted garlic. Only potatoes would not be my choice either...those other things pair well with potatoes. No carb left behind is a good motto.
You might have to teach your local pizzeria how to do the pastrami...swiss (or mozz) cheese, good deli pastrami, light mustard, pickles. My favorite place to get it happens to be a deli and pizzeria so the pastrami is yum. Now I want some but it is a calorie bomb for special occasions only.
Edited to add...fennel would be good with the potato too.

P.S. A couple of our local burger joints DO have pastrami, so I am able to get a pastrami burger, a favorite of mine. Not as good as the many pastrami/burger places in the greater SoCal area, but acceptable.

Took the newly opened Riyadh Metro to venture back to Blanca for another yummy blanca pizza (as I watched pizzas come out of the kitchen, this one definitely seemed the most popular)

For me it's just the double starch thing I guess. I don't do potatoes in burritos or pitas or shawarmas either. I found it strange in Brazil that french fries and white rice were very commonly served side by side on various plates. By the way, have you had the opportunity to witness Europeans eating hamburgers with knife and fork yet?
