Snowed in at home menu:
A traditional but slightly southernized Moroccan chicken tagine with preserved lemon, sweet potatoes, collard greens and a healthy dose of chili, simmered on low heat for 3 hours until the chicken is very tender - yummy!
Dessert is sticky rice with fresh mangos and roasted pineapple, drizzled with coconut cream and sprinkled with toasted coconut and sesame seeds.

I've made it without the rosemary in the past and I find it tastes better with it. I add a little bit of brown sugar to reduce some the bitterness of the Guinness. It's been an awful winter so I've been making it just about every week! I usually eat it with some fresh sourdough bread from the Italian bakery next door.

I did put 2 bayleaves in the slow cooker. They're an essential ingredient!

Then a cookie from the Mad Hatter Bakery. It was an iced cookie that looked like a corset. Very cute.

We are still snowed in here so no going out for sushi.
My husband and I really love sushi. It's the only kind of food we eat in restaurants a lot but would never attempt to duplicate at home.

Sometimes simple works just fine.
