Whatever you do ..... do not EVER get obsessed with making genuine pizza Naples style.

You'll end up to your neck in biga, Caputo flour, a stock of fruit wood, an enormous beehive oven, and possibly a buffalo on your balcony. Just for a bleedin' pizza. Still ... they are unbeatable.
