Snowed in at home menu:
A traditional but slightly southernized Moroccan chicken tagine with preserved lemon, sweet potatoes, collard greens and a healthy dose of chili, simmered on low heat for 3 hours until the chicken is very tender - yummy! Dessert is sticky rice with fresh mangos and roasted pineapple, drizzled with coconut cream and sprinkled with toasted coconut and sesame seeds. |

I've made it without the rosemary in the past and I find it tastes better with it. I add a little bit of brown sugar to reduce some the bitterness of the Guinness. It's been an awful winter so I've been making it just about every week! I usually eat it with some fresh sourdough bread from the Italian bakery next door.

I did put 2 bayleaves in the slow cooker. They're an essential ingredient!

Snowed in so I made an omelet and toast and had some apple pie my Mom gave me. Not a bad day.
|
I made roasted broccoli and cheddar soup.

It's the only kind of food we eat in restaurants a lot but would never attempt to duplicate at home. |
