I made a salad with lettuce, tomatoes, and one serving of the spicy cucumber salad, and used the sauce as dressing. So delicious that I ate the entire thing, followed by a banana yogurt for dessert.

Kim Laidlaw’s Apple Whiskey Cake. Stunningly delicious. I set the oven temp to 350° (instead of 325° ) and I’m glad I did as the brown sugar and butter made such a delicious crispy edge. Lots of diced apples so it was still moist. If it sounds good, the recipe is available online. |

Also had cod and vegetable barley soup, however for the soup I drained the liquid and added no-sodium chicken broth (powder and water). I've found that many of the canned soups are extremely salty and this helps cut some of it out. -J. |

I had a whole wheat bagel as an afternoon snack. For dinner I had more cod and some cucumber salad. Dessert was half a bowl of oatmeal. Just got home from food shopping. Tomorrow I am in the office so I have to prep my lunch tonight. -J. |

Totally get it about being busy... I just meal-prepped for tomorrow. Breakfast will be oatmeal. Lunch: the last of my baked cod (I know I'm taking a risk bringing fish to the office), steamed broccoli (will prepare at the office), and a baked sweet potato. Also bringing carrots for a snack. It's a lot of food but all told will be a little under 600 calories. I am going out for dinner at my dad's social club tomorrow so trying to stay healthy during the day. -J. |

The more breakfasts I cook for myself, the more I realize it’s really just all about the potatoes. I did scramble a couple eggs as an afterthought.
