I made a salad with lettuce, tomatoes, and one serving of the spicy cucumber salad, and used the sauce as dressing. So delicious that I ate the entire thing, followed by a banana yogurt for dessert.

Kim Laidlaw’s Apple Whiskey Cake. Stunningly delicious. I set the oven temp to 350° (instead of 325° ) and I’m glad I did as the brown sugar and butter made such a delicious crispy edge. Lots of diced apples so it was still moist. If it sounds good, the recipe is available online.

Just started the Panettone for Christmas. I do love that bread.

I too had carrots, but by themselves.

Also had cod and vegetable barley soup, however for the soup I drained the liquid and added no-sodium chicken broth (powder and water). I've found that many of the canned soups are extremely salty and this helps cut some of it out.

Guess everyone forgot to eat today :confused:

I had a whole wheat bagel as an afternoon snack.

For dinner I had more cod and some cucumber salad. Dessert was half a bowl of oatmeal.

Just got home from food shopping. Tomorrow I am in the office so I have to prep my lunch tonight.

Thought about it, but just dealing with too many issues.

Bought some thinly sliced porkloin yesterday evening (was on clearance)... way way too lean... so took some butter and garlic salt and pan fried them before stir frying them with some salty mustard leaves (FlyerEC's kiam chye) and the results topped a bed of jasmine rice.

Sounds tasty!

Totally get it about being busy... I just meal-prepped for tomorrow.

Breakfast will be oatmeal.
Lunch: the last of my baked cod (I know I'm taking a risk bringing fish to the office), steamed broccoli (will prepare at the office), and a baked sweet potato. Also bringing carrots for a snack. It's a lot of food but all told will be a little under 600 calories. I am going out for dinner at my dad's social club tomorrow so trying to stay healthy during the day.

No, just some business traveling, and sometimes I just don't really get a chance to eat. Not that I'm trying to do intermittent fasting, but when I travel for business, it's just something that happens with my preferences.

PS - Not that there's anything wrong with it, but I'm not crazy about domestic airline fare and most food offerings at lounges.

Lean = not good!

The more breakfasts I cook for myself, the more I realize it’s really just all about the potatoes. I did scramble a couple eggs as an afterthought.

Not necessarily. It just means you have to get creative (or deal with blander food). In my case, mixing it with the salty mustard greens did help. Not sure there is a market for lean pork loin rolled in cornmeal though...
