Speaking of pumpkin, Betty Crocker used to have the best pumpkin bar mix - chewy and delicious. Apparently, I was the only one buying them because they appear to be discontinued. I wanted something chewy (not cakey) like a blondie. I found a recipe that said they were chewy, but not chewy enough for me. I found another that sounded really good, but OMG, 2 3/4 cups of brown sugar, a 10 oz package of caramels, 2 cups of heavy cream in a 13 x 9 pan? :eek: (The caramels and cream were for a caramel filling between two layers.)

I wonder if underbaking them a bit would help them be less cakey. Or you could skip the caramel filling (although I am sure it is wonderful) in the the other recipe. I am not a baker but I think I would compare ingredients with a chewy brownie that you like...maybe using less flour helps.

Breakfast: oatmeal with sodium-free chicken bouillon. Interesting but very tasty.

Lunch: turkey burger patty (made last night), some heart-of-palm pasta with tomato sauce and corn, and veggie tuna salad

Dinner: whole wheat bagel with whitefish salad: and also a sandwich at a bar.

There was a significant liquid portion of dinner that has not been logged and will not be discussed :rolleyes:

The picture made the caramel one look pretty chewy. I almost made it but the other one had more pumpkin and I had a whole can of it open.

mexican omelette (with vegan chorizo) with potatoes & toast
coffee with oat milk

it took me 2 minutes of menu scroll before I realized that the menu was all non-meat lol lol

Lunch for me today was a sardine sandwich on raisin bread. I know that some (or most) may find it disgusting. I really think that the raisins and sardines work.

I just had a snack of leftover heart-of-palm pasta, with tomato sauce, Ro-Tel no-salt-added, and corn. Was trying to get rid of a few things the other day and this was the result.
