Breakfast: oatmeal and honeydew
Lunch: chicken noodle soup (nothing special) and a McIntosh apple Snack: cantaloupe with sour cream Dinner tonight will be turkey burgers. I have to go pick up some produce so it will be accompanied with a vegetable of some sort. EDIT: I have an idea to make heart of palm pasta with a can of Rotel or maybe a real tomato sauce (or both). So that may be happening. I just don't want to do anything big tonight. -J. |

No photos but I made the hearts of palm pasta with Rotel, Simply Ragu, and corn. It is an interesting sauce but the entire thing is under 450 calories and should last me 2-3 days.

Beef combo pho (tripe brisket flank etc) with extra jalapeño honeydew smoothie i haven’t been here since early 2020 or 2019 and I look forward to many returns. Soooo happier! https://cimg6.ibsrv.net/gimg/www.fly...24cafcaca.jpeg https://cimg7.ibsrv.net/gimg/www.fly...8bd47228a.jpeg |
Treated myself to a pint (yes a pint!) of Nick's "Swedish Choklad" ice cream. The entire thing was 240 calories! After a bit of a wild week I am getting back on track.

Eggless baking #4, a pumpkin muffin recipe tripled and scooped into my loaf pan. Very spicy, not too sweet, moist, and good fluffiness. Egg substitutes: canned pumpkin and vinegar.
PS - The canned pumpkin best by date was 2015 and the can was dented. I had baking aspirations in olden times. 😁 https://cimg0.ibsrv.net/gimg/www.fly...fb6d110d2.jpeg https://cimg2.ibsrv.net/gimg/www.fly...57e789190.jpeg |
