My 8 year old makes killer pancakes with the standard Krusteaz buttermilk pancake mix we buy at Costco. She just adds some blueberries in, and they’re as good as any I’ve had in a restaurant. Just make sure it has lots of good butter and syrup. I’m not sure if I’ve posted her pancake pics before.

I’ve tried the Krusteaz mix (there must be a non-buttermilk one) for waffles and thought it was bland by itself. Adding bananas and chocolate or berries of any sort helped. Also tried Amy’s gluten free and it was horrible. The Better Home and Gardens cookbook or Betty Crocker have simple pancake recipes that work for me.

While my breakfast was roasting, I whipped up my third try at eggless baking, applesauce cake, which is also oil-free. Oh, and they’re all gluten-free by happenstance because I bought organic oat flour not realizing oat flour is gluten free. The applesauce cake is a little chewy and definitely the least dense of the three.

I bought krusteaz gf pancake mix when my child hosted a sleepover. The gf tasted fine for the children and they had seconds. I’m sure they’d really be great with added fruit. I definitely use butter on the griddle and I don’t use it on pancakes themselves - just the organic maple syrup :-) I am just so chuffed to have pancake cooking in my life. So happier!!! |
Kodiak Cakes Buttermilk pancake mix is what I keep picking up for use abroad because I know the mess that comes when the same persons are whipping up pancake/waffle-making batter from scratch instead of using a processed mix. Used some for the most recent breakfast, but I really would have preferred some French toast at the time. Either way, same maple syrup from west or east of MSP.
