In a mortar (or food processor) pound the following: red Thai chiles (prik chee fah), white pepper corns, cumin powder, coriander powder, plenty of garlic, fresh cilantro, sliced lemongrass, shallots, galangal, peel of kaffir lime, Thai basil, and shrimp paste into a red curry paste adding chile water (not oil) as necessary to end up with a cohesive form. Cook into hot oil adding palm sugar and fish sauce for seasoning. Add the chicken parts and cook until done. For finish, add the coconut milk and cook for another 2 minutes. Seve with rice or noodles.

Or, if you cannot find the ingredients in your area, you can always buy the ready-to-cook Thai red chili paste in the Asian section of your supermarket or at an Asian market.

Matcha milk jam (Craftsman & Wolves) is milk, matcha powder, sugar, and salt. I’m not allergic to dairy (big yay). I have oat milk with coffee to reduce cholesterol that I would have with dairy milk; this is a huge shift from decades of having dairy cream and sugar with coffee as I now only have it with oat milk without sugar. I have different spreads for toast and sometimes I’ll have a nut butter instead of a dairy spread.
