To sooth the sense of foreboding , lunch today had to be more than ordinary . An extremely satisfying meal indeed 😊 .. a few photos below with little description for now . May add more , perhaps photos too , later .

As we were savouring the last mouthfuls of the delicious potatoes , news came that dining in or al fresco at restaurants will be suspended from Sunday ‼️ For a whole month ❗️ ..

Mrs BV and I have started delivering Meals on Wheels in our community a couple times a month. It’s a nice service for the many (mostly) single, getting on in years, recuperating from surgery & just plain don’t like to cook folks here. There is one hot meal each day and a chef’s salad alternative. Today was the first time we had to deliver a salad and it smelled wonderful when it came out of the cooler. So …

I made a chef’s salad for lunch. Romaine, Vidalia onion, Kalamata olives, grape tomatoes, cheddar slices, sliced pork roast, cucumber chunks, radishes splashed with vinaigrette.

Indeed, it's like avocado toast and with the acidity of the feta, no need even for salt - thank you! :)

Currently baking my little pork roast with roasted tomatillo sauce that I made this morning.

Quick question. Why do you share your calendar with us? Am I missing something? Perhaps there was a thread that I missed.

I had pho for the first time since January 2020. Huge huge time gap.

Am trying to recall where else we have had popcorn ice cream - country ? restaurant ? .. this one was smooth . Thought the others had popcorn bits , still crispy as they were so minute . Rather missed this in Voyage ‘ s version .

Anyway , below is what desserts are at home ;)

Really hope flying will be possible soon - miss travelling to savour meals elsewhere too .

Meeting up with some of you on Zoom has helped somewhat 😉

Dinner out last night at one of my favorites, The Crooked Spoon in Clermont FL. I can’t seem to get past one menu item to try anything new, although I did change it up. They have a fresh fish BLT featuring thick, crisp bacon and roasted red pepper- caper mayo. Previous time I chose blackened redfish, last night I selected grouper. Washed it down with Cider Boys First Press available on tap. My father in law had the lobster grilled cheese which looked like about a half pound of lobster salad between two slices of cheese toast. I couldn’t believe he finished it all. If the server had arrived a minute later, she might have caught him licking the plate.

Yesterday I cooked my little pork roast (2 lbs) with charred tomatillo sauce, potatoes, eggplants, green onions, shallots, and garlic.
- Seared the pork with olive oil over high heat on all sides in a cast iron skillet for about 5 minutes. Removed.
- Added the shallots, green onions and garlic to the skillet and cooked for 3 minutes.
- Placed the pork back in the skillet and added pealed boiled potatoes, 2 Anaheim chilis and placed uncovered in preheated 450F oven
- Cooked uncovered for 30 minutes. Then covered to cook covered for additional 1.5 hours.
- Added the sliced eggplant disks on top one hour before ending.
- Final product was subliminal but the pork was too soft to slice.
- Ended up eating the potatoes, delicious carnalized edges, and drippings with bread for dinner.
- The beautiful pork formed a shape and I sliced it this morning.

Applied the above pork and potatoes to breakfast this morning - with the following results!

Have some Vons' bought apple strudels which I crisped in the oven, also for breakfast! :)
