You can always change to an earlier or later train, though it may involve buying a new ticket and cancelling your first one, and you'll have to pay any fare difference. (In that sense, Amtrak behaves like WN rather than, say, CO.) In my experience it's much easier to do this before you print the ticket.

The Quik-Trak machines used to offer you the opportunity to change trains to a train of the same type (i.e., Regional to Regional or Acela to Acela) but I don't know whether they do any more.

No. You can go to an Amtrak ticket window and switch your ticket over to the other train. There is a cut off time before a scheduled departure that you can make the switch. You may have to pay fare difference. Tickets are good for one year after issue so if you miss a train, you have that long to get it switched to another train.
