Stacked enchiladas are very traditional in New Mexico. Funny thing is I know several people from New Mexico who swear that stacked enchiladas taste better than rolled enchiladas. I don't get that, but I've had some darn good stacked enchiladas over the years in Santa Fe, Albuquerque, and the mountain areas.

Before tonight, I had never heard of making enchiladas this way. They kind of look like a Mexican pizza.

Tang...it has one good use IMO.
I mix it with instant tea, cinnamon, cloves, nutmeg, lemonade and a few other spiced and make a quick spiced tea during the winter/christmas season. I like it that way :)

Yeah, it might be fine that way. But again, why would anyone buy it to drink as orange juice, when good orange juice is so readily available?
