Australian Wagyu bacon-wrapped filet, au poivre, brandy cream

I dry brined it for about 5 hours and then reverse seared it from the oven. Made for my wife’s bday. Served with 2005 SQN Atlantis Fe203-1b

Perfect cook...beautiful. What was the internal temp when you took it out to sear? Wireless Bluetooth thermometer?

thank you. I took it out at 127 and use a meater wireless thermometer.

I have a Meater & really liked it until it died and I was forced to get a new one. Based on the interwebs, evidently they aren't known for reliability so I bought a Thermpro and don't like it nearly as much--not very user friendly.

I found the EE Japan special (Shake Shack and Dean and Deluca) all wrapped up in Narita Terminal 1 - talk about a great way to use some of my cash stored on my ICOCA - yes, I ate dinner at Noon…

Room service at The Peninsula Hong Kong - grilled salmon (lemon butter on the side and not pictured) and some delicious French fries - the pretzel roll in the bread breakfast was delicious, too

“La Stella” at Motorino Wan Chai (Hong Kong) - I’ve had this dish before and remembered my issue with it - it is stuffed with too much ricotta - who knew that could be a thing?
