Last night was "clean out the fridge".
Half head of Napa cabbage, Thai eggplants, mushrooms, and a carrot. Added 2 chicken thighs from the freezer...
Stir fry time.

Stayed late at work (tough to turn down double time and a half ) and heated up a macaroni and cheese dish from Trader Joe’s. It was supposed to be spicy, though wasn’t at all. Tossed in a couple air fried chicken tenders and put some hot sauce on it which wasn’t a bad meal.

The potstickers look great! I have yet to find any Chinese sausage that I care for. Odd since I absolutely love sausage in general.

Within a few block radius of Midtown Sacramento there are at least two dumpling places that I found.

Anyway, looking at the Wikipedia entry for Chinese sausage, there appear to be multiple varieties including some stuffed with duck livers as well as some that are basically blood sausages: https://en.wikipedia.org/wiki/Chinese_sausage

There is a whole range of them, more than what's listed in that article. They seem to not list some made kinda like boloney but using fish (overly processed to the point you can't tell what protein is used). Lup cheong has several versions. Personally I don't really like the version that mixes liver with the meat (for me it makes the sausage grainier), but it makes for a quick meal (rice, lup cheong and some vegetables) if nothing else..

Mrs BV lunch yesterday. The menu said Mac and cheese with crab but they were out of crab so offered some smoked sausage instead. I couldnt name the restaurant without looking at the receipt. But it had a gorgeous view of Stanley Park across Vancouver harbor.

I had KFC later in the day. It was gross.

Brother brought over some KFC last night but I didn't touch any of it. So for tonight's feast,

KFC chicken teochew-style rice porridge from a slow cooker... deboned the chicken, tossed it into a slow cooker with a cup of rice (you don't need a lot to make congee) and let it go on high for several hours... just to chickenify it more, I had some salted eggs that I had made from a few days prior.

Had a side of lo han chai to go with that.
