I hate saying this but until it's done. Invest in a good meat thermometer and test it until it hits your desired doneness. Sometimes it's 12 minutes, other times 16. I aim for an internal temperature of 125 for salmon and 130 for everything else. I use this one

And... I currently lack space for another cast iron pan. We have a square 12 Scanpan with ridges - Im not sure if it is adequate to function as a cast iron. I use it for making grilled cheese. Our other 12/14 (?) pan is a normal frying pan
So you just remove the foiled fish from oven to check the temp? We have an older meat thermometer that works well. Im satisfied with just checking at the 12 minute mark and then every 3 minutes. Do you use 400 temp? thanks again for your info, esp posting your absolutely favorite way to have frozen fish, because it sounds delicious and I look forward to trying it. Im going to screenshot and convert to pdf :-)

Thanks - I didnt realize that you thawed the frozen salmon before searing it.

When food thaws it lets go of some moisture and if you cook it from a frozen state you are not going to get a good sear on it. If you are cooking it in liquid already such as poached it doesn't matter.
When I cook fish sealed in foil I use the non-stick foil which I love. And you can kind of tell by looking and pushing down with your finger if it is done. If you have an old dial meat thermometer with a thicker probe you might want to get an instant read digital one that has a thinner probe to use for fish and as long as you are buying a new one you can always get one where you leave the probe in the meat/fish/chicken and a little wire sits outside the oven or grill with a display of the temp on it. It is great because you don't have to keep opening the oven or grill to check on things and then having the temp drop each time.

Cod is very common for fish tacos, but it is almost always battered and fried which you don't care for. I much prefer battered fried fish in tacos, but if I'm having grilled fish tacos, I want a firmer fish such as mahi mahi.

my normal fish taco is a thin fish (snapper, sole, Ling cod); Ill keep in mind that the Costco cod isnt as great for fish tacos when just sauteed. Im going to Gus tomorrow for the rare stuff that Safeway lacks, so Ill probably get some thin fish for fish tacos. Maybe Ill try a cooking comparison if I feel the energy :-)

why not just try the cod and if you don't like it, buy something else next time. Once you get a few toppings on your taco the fish isn't going to be that big of a deal. There doesn't have to be such hard rules.

More fish questions! Just bought swordfish and local red snapper; both wild. I really bought them based on price!

i use the snapper for my fish taco base.
swordfish - I really just want guidance or suggestions. I last consumed swordfish in 2004!!! What are your favorite ways to cook it? I bought a piece, around 11 Oz.

Nothing means previously frozen. Everything was previously frozen. Fresh has no legal connotation.
Grill or pan sear the swordfish like a steak, cook it all the way through. I prefer just salt, pepper, and a finishing sauce. Echoing corky, there aren't too many hard and fast rules around cooking, experimenting is half the fun.

I only grill swordfish. Actually, other than shrimp or scallops I rarely cook any seafood in my house...almost always on the grill. Swordfish is like a steak to me. It is perfect for kabobs or just grilled.
Wild caught refers to the way it was caught not fresh or frozen.
I do think it is possible that the fish you bought were not frozen. Why don't you ask the person who you are buying from? And why do you care?

Are you having a party? You have Costco chicken and now cod and swordfish and red snapper? That sounds like a lot of food to consume in the next day or so.

My Costco chicken 6/pack now has 4 packs in freezer, 1 in fridge, and we cooked 1 last night. Costco frozen wild cod is still in freezer. I bought the 6-Oz swordfish and 1.1-lb of snapper today. The chicken in fridge has a 10/15 date and even Cherries has said that the Costco chicken can last due to its superior packaging.
Im excited to try the sword fish.
In a couple weeks, itll be fun to buy more frozen fish at Costco.
Im still self-educating about fish; its all new to me and I hadnt thought of it until summer 2020.
