I didn't see what thermometer you are referring to but there are several kinds. Some stay inside the oven and usually has a big round dial. I prefer an instant read either with or without the little part that stays outside the oven and shows the temp. Just a regular digital instant read is fine too but you have to open the oven or grill to test the meat.
And yes--cod is very popular for fish tacos.
