https://cimg1.ibsrv.net/gimg/www.fly...f0daa286e9.jpg No Keto enchiladas at my local Costco, so I picked these up instead. One each for lunch today. Definitely lacking in the veggie department, so some sort of salad for dinner tonight. |

For lunch today, we headed to Makino in Irvine and had an assortment of delicious dishes … no dinner - just some aperitif wine & fruits!

How is that bacon wrapped chicken?
They would be good alongside a simple salad. |

It was good. The bacon baked up crispy and there was plenty of cheese filling. I tasted more fontina than mozzarella, and the parm gave the filling some texture.

Actually, it's not bad, but if you were blindfolded, you would never guess "sea salt caramel."

does “not bad” mean tasty and yummy? Is it worth eating? Would fruit be a tastier or allowed keto option?

Agreed, not bad. To me, there was a little something in the taste that was different than a regular ice cream bar, but it definitely wasn't a lack of sweetness. MCT oil doesn't taste so great, so maybe that was it?

Chicken & vegetable soup with Asian dumplings and Asian noodles.

Dinner was a Green Chef dish: lemon pepper tilapia with roasted potatoes and sauteed green beans, roasted red peppers, and onion.
I made a Green Eyes cocktail (basically a gin sour with chartreuse) and a gin and tonic as well. Tonic was Pellegrino. |
Dinner tonight: Pan-seared salmon with rice and salad
